Ingredients:
1 Head of Cauliflower
1 Large Egg
½ Cup Low Fat Shredded Mozzarella
½ TBS Basil
½ TBS Oregano
Cauliflower Crust:
Preheat oven to 450० degrees Fahrenheit
- Wash and dry cauliflower removing stems and leaves, then separate into small florets leaving ½ inch of steams.
- Transfer florets into a food processor and pulse until finely ground (should mimic rice).
Transfer into a microwavable safe bowl and microwave for 4-5 min or until softened. Drain excess water by using a towel or cheesecloth if available to make the cauliflower as dry as possible.
- In a large bowl, mix cauliflower, egg, mozzarella, basil, oregano, and salt/pepper to taste.
- Spread mixture evenly onto a greased baking sheet or pizza pan. Place into a preheated oven for 12-15 minutes or until lightly browned.
- Top off with a low sodium marinara sauce, fat-free mozzarella, your favorite vegetable toppings, or protein such as shredded chicken if desired.
- Return the pizza into the oven for 3-5 minutes or until the cheese has fully melted.
